While the move to Intel makes a lot of sense to apple for their long
term roadmap, the unfortunate truth is that the G5 is currently a
superior processor architecture, albeit more power hungry, than
anything Intel offer at this time. If you have used both Altivec and
SSE2 for example you will know what I mean.
I think many people, including me, will be holding onto their
PowerPC's as long as they possibly can. So supporting the G5 (and G4)
should still have a lot of future in it.
As for supporting the Intel version of MacOS, it would probably be
worth looking at Xen and Qemu, as much of the hard work has already
been done.
