I think this line only reports what the IDE device is capable of, not 
how it has been configured.  I have a PowerBook 2400 (whose IDE 
controller is definitely not UDMA capable) with a UDMA drive 
installed.  Here's its dmesg output related to hda:

hda: IBM-DTCA-24090, ATA DISK drive
hda: Enabling MultiWord DMA 2
hda: 8007552 sectors (4100 MB) w/468KiB Cache, CHS=7944/16/63, (U)DMA
