Yes this can be a problem, one way to make what is happening with
Spamassissin transpatent to to set up a list specially for spam and
forward all the email that Spamassissin matches to that list -- then
if someone keeps an eye on the spam-trap list non-spam can be
resucued from it. 

Yes it would be a bit of a pain to set up.

Personally I'm quite happy putting up with some spam in the cause of
keeping lists open.
