By a large margin, most upgrade cards produced were for Power Mac 
models with upgradable CPU cards.  There is no switchover with that 
configuration since the original CPU is replaced with the new G3 or G4 
CPU.  The original poster had a PowerMac 7600, which is a classic 
example of an upgradable Mac.

The most common example of the other type of upgrade (which does switch 
during MacOS boot) would be the "L2G3" cards produced for the Performa 
/ PowerMac 6400/6500 family, and other computers which used that 
motherboard design.  L2G3 cards replaced the original L2 cache module, 
since the CPU was soldered to the motherboard.  These cards are 
typically very problematic under Linux, if you can get them to boot 
Linux at all.  (They're a horrible hack from the hardware perspective 
and were never all that reliable even under MacOS.)
