There's a Startup Disk control panel that tells the Mac which disk to
use as the System disk at the next startup.

You didn't mention what machine you're using. Assuming it's New World,
holding
down the 'C' key at startup should boot from it. You may need to check a
control panel or two to enable CD booting - I seem to recall someone
mentioning
that but can't remember for sure.
