It is an HFS partition, and it is marked as -rw, however, I also
believe that it is mounted in linux. I know I can unmount it by
using "umount", but is there a way to have it not mount on
start up?

If your Mac partition is mounted in Linux then it will appear locked in
MOL. Otherwise, you need to have the following in your /etc/molrc:

blkdev: <partition> -rw

the -rw flag indicates that this volume should allow read/write access,
-ro indicates it should allow read-only access.
