How do you setup a second NIC?

Duplicate your ifcfg-eth0 to ifcfg-eth1:
[root@byteme /root]# cd /etc/sysconfig/network-scripts/
[root@byteme network-scripts]# cp ifcfg-eth0 ifcfg-eth1
Edit the new ifcfg-eth1 to have the correct IP address, subnet, etc.
Activate the interface:
[root@byteme network-scripts]# ifup eth1
-ken
