I would rank any Mac high above a pentium, but I'm biased.
YDL 2.2 would work well for the 7600, try to find an original distro 
CD instead of downloading it. 
The 7600 is an easy processor upgrade--one of the easiest boxes to 
open. A 200mhz card can be found occasionally on ebay for about $20 
US. If the 120 mhz processor is a 603, I believe you will have 
problems using MOL (Mac-On-Linux).
Or go for a G3 upgrade, starting at around $120 new.
I am running YDL 2.2 on a 7500/200 604e and like it very much.
