Installing *across* (2) 1-gig drives

Depends.  What install type are you doing?
For 1GB probably isn't enough if you're doing Home/Office, Developer
Workstation, or Everything.  And yes, you can boot from a MacOS drive,
and install onto a 2nd drive.
