That is entirely up to you. Like most modern GUIs, Linux relies a lot
on processor speed for drawing windows, loading applications, and so
on. However, Linux is better for this than most operating systems, in
that it has more options for disabling unnecessary cruft, has
lower-impact alternative window managers, and always has the command
line to fall back on.
I was serious about needing a larger monitor, however. Most of the
Linux (KDE/Gnome) dialog boxes, control panels, and many application
windows are hard coded at sizes larger than 640 x 480. However, as Tim
("gladiool") points out, you might not be able to run video at sizes
much larger than 800 x 600 with the built-in video on the 7500 -- you
probably have either 2 or 4 MB of video RAM and no graphics card,
