Changing console resolution?

Greetings,

I just replaced my Apple 15" flat panel with a 17" flat panel that 
doesn't support 640x480 resolution.

I can manage a remote X session to run Xconfigurator, but which 
resolution should I choose?  I can't seem to get it to work.

Also, I can't "watch" the Mac boot!  The 17" display never displays 
ANYTHING.  How does one change the default resolution of the core, 
text-based Linux console to something other than 640x480?
