anaconda is the RedHat installer. If you've ever installed RedHat it's
exactly the same. For the /home issue when you get to configuring your
disks it drops you into DiskDruid, you tell it where to put what partition
and then it asks if you want to format the partition when done, answer
'no' for the /home partition.
Warning: It's fairly easy to scew this up, you should backup /home before
doing this. Also, since 3.0 is really different than 2.3, your
preferences will make things like GNOOME/KDE freak out. There's an
article on yellowdoglinux.com/support about how to move your stuff.

You might be able to upgrade a running 2.3 system to 3.0 using apt. Apt
can screw stuff up sometimes, so you may want to use apt to do a minimal
upgrade and then use the (new to ydl-3.0) yum updater to finish the
upgrade. If you look back into the archives, there's info about
upgrading 2.x releases to 2.3 using apt, that information would be a good
primter if you decide to go this route.
Again, upgrades are never an ideal route, so there are always going to be
issues you need to be aware of due to the complicated nature of what an
upgrade does.

It'll be a few weeks before I have time.
