Apple's DarwinStreamingServer will do what you need.  (Poke around 
the Apple OpenSource site.. there should be a link there.. you'll 
need to register too, blah blah :)

There are some install issues but once it's in it runs like a champ.  The
archives of this list should have several threads about the install
procedure.  (Look for "DSS" or "Darwin stream")

RealNetworks also recently (read: this week) released the code to it's 
streaming server as "Helix server" you may want to investigate.  I doubt 
that it's useable as is, but it's something to watch.
