Ethernet works fine.  I don't have experience with modem.

Yes, YDL 2.3 is virtually like RH 7.3 (and I would assume YDL 3.0 would
be like RH 8.0).

RPMs must be for PPC hardware, not iX86.  Most often you will find them
easily.  Occasionally, PPC RPM's are not available.  In that case you
must compile from source.

Not a problem.  I believe it comes with YDL purchased CD's.  Or it can
be downloaded and installed from the internet.

Evolution is very popular mail application.  It is include with YDL.

In my opinion running (any) Linux distribution on (any) laptop is a bit
of a crap shoot.  My experience with iBook is that it is not any more
frustrating than what I hear running Linux on an Intel laptop, probably
better since the variety of proprietary hardware is less. And then there
is always MacOSX and Fink.  ;^)
